Bean tostadas topped with pico de galllo

Have you ever tried tostadas?  
Corn Tostadas are the crunchy version of a corn tortilla and as with tacos, you can top them up with anything you want.  They’re a little messy to eat (maybe skip them on a first date) but the crispy element will make you ask for more!

The perfect vegetarian lunch or dinner
These tostadas are a fun, healthy and tasty meal that you can fix in a few minutes so they make the perfect lunch or dinner for those busy days.

For this recipe, we covered our Taiyari blue corn tostadas with refried black beans and topped off with lettuce, avocado and pico de Gallo. 

Of course, a drizzle of salsa and crema can’t be missed. This week as you already know, we are joining the Nationale Week Zonder Vlees & Zuivel (National week without meat and dairy) so we are replacing the usual creme fraiche for a plant-based alternative.

Sounds easy right? You will be surprised about how much flavor you can create with very few ingredients.

INGREDIENTS

TOSTADA INGREDIENTS:
6 Tortillería Taiyari Artisanal Corn Tostadas
Refried beans
1 cup of Lettuce 
Avocado
1 Lime
100 mg (vegan) crema.

PICO DE GALLO
1 tomato
½ onion
Lime juice
Freshly grounded pepper, salt
Fresh cilantro (you could skip it)

SALSA
We use our Tortilleria Taiyari Salsa macha.

Serves two people

INSTRUCTIONS:

  1.  Heat up one cup of refried beans.
  2. In the meantime, slice the lettuce and dice the avocado into small cubes.
  3. Make the pico de gallo by chopping the tomato and onion into small cubes. Mix this together in a bowl with some lime juice, a pinch of pepper and salt. If preferred, you can add also some shredded cilantro leaves to this.
  4. When the beans are hot and your toppings are ready, it is time to build your tostadas: spread about a spoon full of refried beans on each tostada. As a second layer, add the lettuce, then de avocado cubes, and lastly the pico de Gallo. 
  5. Season it with salt, pepper, a pinch of line, and of course some salsa (salsa macha is our fave choice but any salsa would do). For extra creaminess add (vegan) crema.
