INGREDIENTS

For the Tacos:

  • 1 medium portion of Kibbeling
  • 8 Taiyari corn tortillas taqueras
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 ripe avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


    For the Chipotle Mayo Sauce:

    • 1/2 cup mayonnaise or Greek yogurt
    • 1-2 chipotle peppers in adobo sauce, finely chopped (adjust to taste)
    • 1 tbsp lime juice
    • Salt and pepper, to taste

Serves 2-3 people

INSTRUCTIONS:

  1. Warm the corn tortillas in a dry skillet or microwave.
  2. Place a few pieces of kibbeling in each tortilla.
  3. Top with shredded red cabbage, shredded carrots, and avocado slices.
  4. Drizzle with chipotle mayo sauce.
